Giamatti-Worthy Holiday Drinks

Worth the work, I Promise:


HOT BUTTERED RUM

1 pound butter
3/4 pound dark brown sugar (I use less)
6–8 three-inch cinnamon sticks
60 whole allspice berries
6 star anise pods (I double)
fresh ginger, three-inch piece, sliced thin
70 whole cloves
1 vanilla bean, split and scraped
1/2 teaspoon sea salt
10 cups water

Brown the butter in Dutch oven over medium-low heat. Fry the spices and ginger in the butter. Add the water and sugar. Stir until sugar dissolves. Simmer for 10 minutes, then remove from heat. When the liquid is room temperature, pour into container and place in refrigerator until butter solidifies (overnight). Lift out butter/spices pancake that forms on top, then strain out and discard the solids. Store in refrigerator. 
Assemble:
1-1/2 ounces Mount Gay Black Barrel rum
1/2 ounce Gosling's Black Seal rum
5 ounces spice broth, heated
whipped cream 

I store in mason jars in frig, great for handing out to friends if you can bear to share it. I've tried with just the Gosling's, but the rum combo really is much better. Don't forget the whipped cream!

I have a killer homemade eggnog recipe somewhere, just have to find it....

    Homemade Eggnog

    6 eggs, separated
    3/4 cup sugar
    3 cups milk
    1/4 cup bourbon
    2 tablespoons dark rum
    2 tablespoons brandy
    1 cup heavy cream
    1/2 teaspoon freshly grated nutmeg 

    Put egg yolks in a medium bowl and set the bowl over a saucepan of simmering water. Add 1/4 cup plus 2 tablespoons of the sugar and whisk over low heat until pale yellow and thick, about 5 minutes. Whisk in the milk, bourbon, rum, and brandy, and transfer to a large bowl (I just start with a large bowl).

    In another large bowl, whisk the egg whites with the remaining sugar until Very Soft peaks form. Stir the whites into the yolk mixture. In a medium bowl, beat the heavy cream until Lightly thickened. Fold the whipped cream and nutmeg into the eggnog and chill thoroughly. Whisk to reblend everything before serving.
