Pozole verde, with left over pork shoulder I cooked in the instant pot earlier in the week.
Pork shoulder in the instant pot is so freaking simple and tasty. You can use it for just about any protein you could need. I am cooking some up tomorrow with some cabbage, Himalayan sea salt, and garlic. It is easy and amazing.
i can get down with a good pork shoulder. a few years ago i had people over for the Super Bowl and i made carnitas in my slow cooker. they came out so damn good! served them up taco bar style with a stack of tortillas, pico, several fresh salsas (roja, verde and corn), lightly salted dice avocado, and crema. i also made a big platter of carnita nachos which was the cherry on top that everyone needed.
I know the fellas have mentioned Goetta before but it is definitely a Cincinnati only phenomenon. This past weekend I got to hang out with some friends for the first time in a really long time around a fire and in the morning, this was made. Fried Krispy Kremes smashed down with goetta, egg and cheese. Holy moly it was incredible! Word to the wise though, if you ever fry up a Krispy Kreme doughnut, don't put it on a paper plate! Instant glue!

@Freddy It’s fancy cheese though, not your bog standard supermarket job. But most everything here is expensive. I think we are one of the most expensive countries in the world.

Friday night, this week was way too long to cook dinner. Opted for old school pizza delivery, nothing fancy (except for the fancy hazy IPA). Hit the spot.

Ha my five year old always insists on black olives and sausage for pizza. Wife and I trying not to eat as much meat these days so loaded up on veggies on the other pie.

I went ahead and made chicken tortilla soup in my Instant Pot (actually it is a Pressure Cooker XL...so a faux-stant pot, but it gets the job done. I followed this:

We used to have a Tamale Festival in the town we used to live. COVID canceled that. So this year my sister in law made a batch solo. So this weekend is going to be tamales and left overs for all meals.

my mom usually makes turkey tamales or turkey enchiladas with left over turkey the weekend after the thanksgiving. sadly 2020 keeps on sucking and that won't be the case this year .
Happy Thanksgiving! For dinner we got a tasty Thanksgiving meal to go from a local restaurant, so I focused on making dessert: roasted butternut squash pie, and an almond cake with ricotta and pear filling.
what are some things y'all do with leftovers? today i'm gonna do some mashed potatoes croquettes. also doing a caesar salad with some chopped up turkey breast.
i wanna try throwing some stuffing in a waffle maker and seeing how that comes out. saw some place on DDD where they did stuffing waffles topped with turkey, mashed potatoes and gravy. yeah i'm gonna be like a mad scientist with leftovers all weekend.
